Wheat groats are crushed, polished grains of hard (preferably) or soft wheat. Grades: 'Poltavskaya' - large fraction of four numbers (No. 1 - the largest, whole polished grains; No. 4 - fine) and 'Artek' - finely crushed, for viscous porridges. Protein 11-14% (higher when using durum), starch 60-65%, fiber 0.5-1.5%. Durum carotenoids give the porridge a pleasant yellow hue. Cooking time: 'Poltavskaya' No. 1 - 25-30 min, 'Artek' - 10-15 min. Application: porridge (crumbly from large numbers, viscous from fine), side dish, soups, casseroles, cutlets. Economical alternative to couscous. GOST 276-60. Moisture ≤14%. Packaging: bags 25-50 kg, packages 700-900 g. Wheat groats from durum resemble couscous in taste and texture - can be used as its budget replacement in Middle Eastern dishes. Caloric content of cooked porridge: 90-105 kcal/100 g. Storage: dry ventilated warehouses, shelf life 12-14 months.
