Wheat bakery flour is a basic product of the milling industry, produced in strict accordance with GOST 26574-2017. It is intended for baking bread, bakery products, production of confectionery products, making dumplings, dumplings, pancakes, pies, puff pastry and yeast dough. Quality indicators: whiteness 36–57 units, mass fraction of gluten 28–30%, IDK (gluten deformation index) 70–90 units, moisture content no more than 13%.
