Oat flour is a fine grind of oat flakes or hulled grains. Tolokno is a traditional Russian product: oats are steamed, simmered in an oven (or autoclave), and then milled. Tolokno is ready to eat without cooking—just mix with water or milk. Contains 3–5% beta-glucans (lowers cholesterol), 13–15% protein, 6–7% fat (unsaturated fatty acids), and avenanthramides (antioxidants). A gluten-free product when cross-contamination is controlled (Gluten-Free certification). Applications: pancakes, fritters, cookies, muffins, breading, thickener for sauces and soups, production of oat milk (plant-based milk—a growing segment, +20% annually), baby food, sports nutrition. GOST 2929-75 (tolokno). Moisture ≤10%. Ash content ≤2.0%. Shelf life 4–6 months (fats oxidize). Packaging: 500 g–1 kg bags for retail, 25 kg bags for industry. Tolokno is a product with increased digestibility: heat treatment partially breaks down starch (dextrinization), so it can be mixed with cold water and consumed without cooking. Caloric value 363 kcal/100 g. Export potential: the gluten-free product market is growing by 10% annually.
