Navat (nabat, nabot, crystalline sugar) is a traditional Eastern dessert and sweetener, consisting of large transparent sugar crystals grown by slow crystallization from sugar syrup or grape juice. Navat is an integral part of the tea culture of Central Asia, including Uzbekistan, Tajikistan, Turkmenistan, as well as Iran and Afghanistan. It is used for sweetening tea (both green and black), making traditional desserts, or as a standalone treat. Types of navat: white (made from sugar syrup), yellow (with the addition of saffron or turmeric), dark (made from grape juice - bekmes). Navat contains glucose and fructose, is easily absorbed, and is considered a healthier alternative to refined sugar in traditional medicine. Production: Uzbekistan, Tajikistan.
