Frozen pangasius fillet is an affordable white fish from Vietnam, farmed in aquaculture in the Mekong River basin. Pangasius (Pangasius hypophthalmus) is one of the most popular fish in global trade due to its neutral taste, absence of small bones, and attractive price. Pangasius fillet is tender white meat without skin or bones, with a protein content of 13–15 g per 100 g and low fat content (3–5%). Glaze: 10–20% (percentage of ice crust protecting the fillet from dehydration during storage). The percentage of glaze should be considered when calculating the actual product cost. Applications: retail trade (portion fillets), catering, semi-finished product production (fish sticks, cutlets, nuggets), social and budget catering. Packaging: 5 kg blocks, IQF fillets in 10 kg boxes. Storage conditions: -18°C, shelf life up to 24 months.
