Fresh tomatoes and tomato paste are basic vegetable products for cooking, food production, and HoReCa. Fresh tomatoes are field-grown and greenhouse, of Russian and imported origin (Turkey, Iran, Azerbaijan, Morocco). Rich in lycopene (a powerful antioxidant, up to 20 mg per 100 g in ripe red tomatoes), vitamins A, C, K, potassium. Varieties: plum (for processing), round (for salads), cherry (for HoReCa), 'beef heart' (for gourmets). Tomato paste is a concentrated product made from pureed and boiled-down tomatoes, dry matter content 25–40%. Base for sauces, ketchups, borscht, stews, pizza. The most in-demand imported product is Iranian tomato paste (high quality, competitive price). Paste packaging: tin cans 400 g, 800 g; buckets 5–10 kg.
