Durum flour features a high protein content — up to 14%, increased carotenoid content (imparting a golden hue to finished products), and a strong, vitreous semolina structure that ensures dough elasticity and a firm texture in finished products. Quality parameters: ash content 0.5–0.75%, moisture up to 13%, raw gluten not less than 28%. Packaging: polypropylene bags of 50 kg. Minimum shipment — from 20 tons. Documentation: Declaration of Conformity TR TS 021/2011, GOST Certificate of Conformity, laboratory test report.
