Candied fruits are used as filling, decoration, and flavoring additive in the production of kulich, panettone, stollen, fruit cakes, muffins, cookies, ice cream, muesli, and granola. Available types: lemon candied peel (various fractions — 6×6 mm cubes, 10×10 mm cubes, strips), orange candied peel, ginger candied peel, cherry, pineapple, papaya and mango candied fruits. Formats: wet (soft, for fillings and adding to dough) and dry (for decoration, muesli, snacks). Sugar content: 60–75%. Moisture content of wet candied fruits: 20–30%. Production: Italy, Turkey, Thailand, Russia. Packaging: buckets and boxes 5–10 kg (professional), bags 200 g — 1 kg (retail). Storage conditions: dry, cool room, shelf life — 12 months.
