Buckwheat flakes are flattened buckwheat groats (whole or broken) for quick preparation: cooking for 3–5 minutes or steeping in boiling water. Technology: steaming at 100–110°C → flattening on rollers to a thickness of 0.3–0.5 mm → drying → packaging. Gluten-free product. Protein 12–14%, rutin (vitamin P), iron 6.7 mg/100 g, magnesium 200 mg/100 g. Glycemic index 40–50 — lower than oat flakes. Caloric content 330 kcal/100 g. Application: breakfasts, muesli mixes, baby food, instant porridges, quick side dishes. In demand in the gluten-free segment: for celiac disease and wheat allergy. Manufacturer's TU. Moisture ≤13%.
