Barley flakes are flattened barley grains after steaming and passing through a roller mill. Thickness 0.3–0.5 mm. Cooking time 5–10 minutes or steeping. Beta-glucans 3–5% (soluble fiber — cholesterol reduction), protein 10–12%, fiber 2–3%, vitamins B1, B2, PP, iron, phosphorus. Mild nutty flavor. Caloric value 315 kcal/100 g. Application: porridge, muesli, granola, baking (texture additive), breading. Economical alternative to oat flakes with similar beta-glucan and dietary fiber content. Contains gluten — not suitable for celiac disease. Manufacturer's TU. Moisture ≤13%. Packaging: bags 400–500 g, sacks 10–25 kg. Storage: dry ventilated warehouses, shelf life 10–12 months. In Scandinavia, barley flakes are a traditional breakfast alongside oatmeal.
